| Rhubarb Coffee Cake |
Ingredients
- 1 cup brown sugar
- 1/2 cup margarine or shortening
- 1 egg
- 2 cups flour
- 1 teas. baking soda
- 1 teas. vanilla
- 1 cup sour cream
- 2 cups finely cut Rhubarb
- 3 TAB melted butter
- 1 cup brown sugar
- 1 cup chopped walnuts
Instructions
- Cream butter, vanilla and sugar.
- Add eggs and beat well.
- Mix in flour, soda, and sour cream.
- Add rhubarb and flour mixture to creamed mixture.
- Put in 9×13″ pan which has been greased.
- Combine melted butter, brown sugar and walnuts, and scatter as topping.
- Bake at 350 degrees for 45 minutes.
