Rhubarb Coffee Cake
Ingredients
  • 1 cup brown sugar
  • 1/2 cup margarine or shortening
  • 1 egg
  • 2 cups flour
  • 1 teas. baking soda
  • 1 teas. vanilla
  • 1 cup sour cream
  • 2 cups finely cut Rhubarb
  • 3 TAB melted butter
  • 1 cup brown sugar
  • 1 cup chopped walnuts
Instructions
  1. Cream butter, vanilla and sugar.
  2. Add eggs and beat well.
  3. Mix in flour, soda, and sour cream.
  4. Add rhubarb and flour mixture to creamed mixture.
  5. Put in 9×13″ pan which has been greased.
  6. Combine melted butter, brown sugar and walnuts, and scatter as topping.
  7. Bake at 350 degrees for 45 minutes.
