Potato Pancakes
Ingredients
  • Medium Potatoes (as many as you want)
  • 1 egg per potato
  • 1 Tab flour, bread crumbs or matzo meal per potato
  • 1 medium chopped onion per 3 or 4 potatoes (opt.)
  • 1/2 teas baking powder (increase if you go over 3 or 4 potatoes)
  • Salt to taste
  • Pepper to taste
Instructions
  1. Combine all ingredients and mix well.
  2. Drop by tablespoonfuls into hot well-greased heavy skillet.
  3. Fry over medium heat until brown on all sides.
