Ohmi’s Schneken
Ingredients
  • 1/2 lb. butter
  • 2 cakes yeast disolved in 1 cup warm water
  • 1/2 cup sugar
  • 3 eggs
  • 3 TAB oil
  • 1 cup sour cream
  • 5 cups unsifted flour
  • Pecans or Walnuts
  • Brown Sugar
  • extra butter
  • Cinnamon and sugar
  • raisins (opt.)
Instructions
  1. Cream butter and sugar.
  2. Add eggs, yeast mixture, oil.
  3. Last add flour and blend well.
  4. Grease top, cover and let stand one hour.
  5. Refrigerate over night.
  6. In muffin tins put one thin pat of butter, 1 rounded teas. brown sugar and pecans or walnuts.
  7. Divide dough in four.
  8. Each fourth makes one dozen pecan rolls
  9. Work with dough cold.
  10. Roll into rectangle.
  11. Sprinkle with mixture of cinnamon and sugar.
  12. Toss with raisins, if desired.
  13. Roll up- cut in slices and place cut side down in pans.
  14. Let rise until double in bulk.
  15. Bake at 375, 25-30 min.
Notes

You can use this dough to make 4 coffee cakes, using jam or solo filling and nuts, in place of cinnamon, sugar and raisins. Bake in 9 inch rounds instead of muffin tins.

You can also make cinnamon rolls by using the above directions but skipping the butter, pecans and brown sugar. Just bake plain and top with powdered sugar and milk glaze.

You can use one nine inch round for 8 to 12 rolls as well if you don’t have enough muffin tins.
