Naomi’s Lentil Soup
Ingredients
  • 1 large can of chicken broth
  • 1 chopped onion
  • 4 carrots sliced
  • 1 1/2 cups lentils
  • 3/4 cup brown rice
  • bay leaf
  • garlic clove
  • pepper
  • 1 large can or 2 small cans tomatoes
  • Tabasco
  • 1/4 cup lemon juice and
  • a few spoonfuls of molasses
Instructions
  1. Combine one large can of chicken broth with onions, carrots, lentils and brown rice.
  2. Season with bay leaf, garlic clove and pepper.
  3. Cook over medium heat till carrots are tender and lentils are soft, about 45 minutes at most.
  4. Then add tomatoes, first juice, then cut the tomatoes up a bit, also add Tabasco, lemon juice and a few spoonfuls of molasses for a sweet and sour taste.
  5. Cook about 15 minutes more so that flavors blend and enjoy with homemade bread.
