| Naomi’s Lentil Soup |
Ingredients
- 1 large can of chicken broth
- 1 chopped onion
- 4 carrots sliced
- 1 1/2 cups lentils
- 3/4 cup brown rice
- bay leaf
- garlic clove
- pepper
- 1 large can or 2 small cans tomatoes
- Tabasco
- 1/4 cup lemon juice and
- a few spoonfuls of molasses
Instructions
- Combine one large can of chicken broth with onions, carrots, lentils and brown rice.
- Season with bay leaf, garlic clove and pepper.
- Cook over medium heat till carrots are tender and lentils are soft, about 45 minutes at most.
- Then add tomatoes, first juice, then cut the tomatoes up a bit, also add Tabasco, lemon juice and a few spoonfuls of molasses for a sweet and sour taste.
- Cook about 15 minutes more so that flavors blend and enjoy with homemade bread.
