Madison Fudge Bottom Pie
Ingredients
  • 2 cups milk
  • 4 eggs separated
  • 1/2 cup sugar
  • 1/2 cup sugar for egg whites
  • 2 TAB cornstarch
  • 1/4 teas cream of tartar (opt.)
  • 1 TAB gelatin softened in
  • 1/4 cup cold water
  • 1 1/4 ounces baking chocolate
Instructions
  1. In a saucepan beat egg yolks and add 1/2 cup sugar and cornstarch.
  2. Slowly add milk to this mixture, if it is warm or room temperature it will thicken faster.
  3. Cook, stirring until thick.
  4. Add softened gelatin and allow to cool.
  5. Meanwhile melt chocolate over low heat.
  6. Add 1 cup of warm custard to chocolate for bottom of pie.
  7. Put into baked pie shell.
  8. Next beat egg whites till almost stiff and slowly add cream of tartar and sugar.
  9. When custard is cool fold egg whites into it gently and cover chocolate layer.
  10. Refrigerate for at least several hours.
  11. Top with whip cream before serving.
