| Madison Fudge Bottom Pie |
Ingredients
- 2 cups milk
- 4 eggs separated
- 1/2 cup sugar
- 1/2 cup sugar for egg whites
- 2 TAB cornstarch
- 1/4 teas cream of tartar (opt.)
- 1 TAB gelatin softened in
- 1/4 cup cold water
- 1 1/4 ounces baking chocolate
Instructions
- In a saucepan beat egg yolks and add 1/2 cup sugar and cornstarch.
- Slowly add milk to this mixture, if it is warm or room temperature it will thicken faster.
- Cook, stirring until thick.
- Add softened gelatin and allow to cool.
- Meanwhile melt chocolate over low heat.
- Add 1 cup of warm custard to chocolate for bottom of pie.
- Put into baked pie shell.
- Next beat egg whites till almost stiff and slowly add cream of tartar and sugar.
- When custard is cool fold egg whites into it gently and cover chocolate layer.
- Refrigerate for at least several hours.
- Top with whip cream before serving.
