Lemon Chicken
Ingredients
- 4 – 6 chicken cutlets
- 1/4 cup white wine or sherry
- 1 teas. garlic
- 1/2 cup chicken broth
- 2 TAB lemon juice
- 1 TAB capers
- Flour
- salt
- pepper
Instructions
- Coat chicken in flour with salt and pepper added to taste
- Saute cutlets 2-3 minutes on a side
- Move cutlets out of pan and reserve
- Deglaze pan with wine or sherry
- add garlic and cook until slightly brown
- Add broth and lemon juice and capers
- Cook down for a few minutes
- Return chicken to pan and heat through
