Lemon Chicken

Ingredients
  • 4 – 6 chicken cutlets
  • 1/4 cup white wine or sherry
  • 1 teas. garlic
  • 1/2 cup chicken broth
  • 2 TAB lemon juice
  • 1 TAB capers
  • Flour
  • salt
  • pepper
Instructions
  1. Coat chicken in flour with salt and pepper added to taste
  2. Saute cutlets 2-3 minutes on a side
  3. Move cutlets out of pan and reserve
  4. Deglaze pan with wine or sherry
  5. add garlic and cook until slightly brown
  6. Add broth and lemon juice and capers
  7. Cook down for a few minutes
  8. Return chicken to pan and heat through
