Karina’s Corn Bread

Ingredients
  • 1+ cup whole wheat flour
  • 1 scant cup corn meal
  • 2/3 cup sugar or slightly less
  • 1 TAB baking powder
  • 1 1/4 cup milk
  • 2 eggs
  • 1/3 cup oil
  • 3 TAB butter melted
Instructions
  1. Put all dry ingredients into a bowl
  2. Beat eggs
  3. Pour wet ingredients on top of dry
  4. Mix just to combine
  5. Bake at 350 20 -30 minutes for bread and 15 – 20 minutes for muffins
Notes

Karina made this recipe a lot with the kids. It’s very healthy and they loved making tiny muffins in the mini muffin pan.
