Honey Cake – Alicia & Opher’s wedding cake
Ingredients
- 3 1/2 cups flour
- 1 TAB baking powder
- 1 teas baking soda
- 2 teas cinnamon
- 1/2 teas. cloves
- 1/2 teas. allspice (opt.)
- 1 cup vegetable oil
- 1/2 to 1 cup honey
- 1 cup sugar
- 1/2 cup brown sugar, packed
- 3 eggs
- 1 teas vanilla
- 1 cup strong tea
- 3/4 cup orange juice
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda and spices.
- Add sugars and combine.
- Make a well in the center
- Add oil, honey, eggs, tea, OJ and vanilla.
- Whisk or beat ingredients together.
- Start slowly and increase speed.
- Make sure all dry ingredients are incorporated.
- Grease pan or pans and line bottom with parchment paper
- Grease the parchment paper
- Use a 9 X 13 inch pan, two nine inch rounds or three 8 X 4 loaf pans
- Bake at 350 degrees.
- Time will depend on pans chosen.
- Watch cake carefully so that it does not burn
Notes
Be sure to use partchment or the cake will stick.
This cake is better the day after it is baked and taste good several days out.
For the wedding we used the full amount of honey but I now often make it with only 1/2 a cup. It is quite nice that way.
For Gina’s 5th birthday we made this cake with no spices and added 3/4 cup of mini chocolate chips.
