French Cream Filling
Ingredients
  • 3/4 cup sugar
  • 1/3 cup flour
  • 3 TAB cornstarch
  • 1 1/2 TAB butter (best to use the real thing here)
  • 2 egg yolks
  • 3/4 cup cold milk
  • 2 1/2 to 3 cups warm milk (Stick to lesser amount for an easier cutting pie)
  • 1 1/2 teas vanilla
Instructions
  1. In a heavy saucepan combine first three ingredients.
  2. Mix together egg and milk.
  3. Add mixture, stir, till smooth and turn on heat.
  4. Slowly add warm milk and cook til thick custard forms.
  5. Take off heat and stir in butter and vanilla.
  6. Cool.
  7. Spread over a cooked pie or tart crust.
  8. Cover with desired fruit.
