Eggplant Sauce

Ingredients
  • 1 small eggplant peeled and chopped
  • 1 TAB olive oil
  • 1/2 cup ricotta
  • 1 TAB milk
  • Parmesan cheese to taste
Instructions
  1. Saute eggplant in oil
  2. Let cook then run through food processor to puree
  3. Add other ingredients
  4. If sauce is too thick add additional milk or ricotta
