Eggplant Sauce
Ingredients
- 1 small eggplant peeled and chopped
- 1 TAB olive oil
- 1/2 cup ricotta
- 1 TAB milk
- Parmesan cheese to taste
Instructions
- Saute eggplant in oil
- Let cook then run through food processor to puree
- Add other ingredients
- If sauce is too thick add additional milk or ricotta
