Date Bars

Ingredients
  • Crust:
  • 3 cups oatmeal
  • 2 1/2 cups flour
  • 2 cups brown sugar
  • 3 sticks butter
  • Filling:
  • 1 cup brown sugar
  • 3 tab cornstarch
  • Dates
  • lemon rind
  • 1 1/2 cups boiling water
Instructions
  1. Cut together ingredients for crust.
  2. Pat half or a little more into a 9 X 13 inch pan.
  3. Pour boiling water over the rest of the filling ingredients and cook until jammy, about 20 min.
  4. Pour over crust and sprinkle top with the remaining crumb mixture.
  5. Bake at 350 for 30 min.
Notes

Variations:
Deb’s Cranberry tart: use this crust recipe but put in cranberries, mixed with lemon juice and a bit of sugar and cinnamon instead of dates.
Susie’s early soccer snack: put in any type of fruit only jam instead of dates.
