Date Bars
Ingredients
- Crust:
- 3 cups oatmeal
- 2 1/2 cups flour
- 2 cups brown sugar
- 3 sticks butter
- Filling:
- 1 cup brown sugar
- 3 tab cornstarch
- Dates
- lemon rind
- 1 1/2 cups boiling water
Instructions
- Cut together ingredients for crust.
- Pat half or a little more into a 9 X 13 inch pan.
- Pour boiling water over the rest of the filling ingredients and cook until jammy, about 20 min.
- Pour over crust and sprinkle top with the remaining crumb mixture.
- Bake at 350 for 30 min.
Notes
Variations:
Deb’s Cranberry tart: use this crust recipe but put in cranberries, mixed with lemon juice and a bit of sugar and cinnamon instead of dates.
Susie’s early soccer snack: put in any type of fruit only jam instead of dates.
