Creamy Brussels Sprouts

Ingredients
  • 2 TAB unsalted butter
  • 3/4 teas. salt
  • 1/2 teas. black pepper
  • 1 1/4 cups water
  • 2 lb. Brussels sprouts, trimmed and halved lengthwise
  • 1 cup heavy cream
  • 2/3 cup roasted whole chestnuts, crumbled
Instructions
  1. bring butter, salt, pepper and 1 cup of water to a boil in a deep heavy skillet
  2. Add Brussels sprouts and simmer, partially covered about 6 to 8 minutes
  3. REmove lid and boil over medium high heat until water is evaporated and sprouts are lightly browned – 3 to 4 minutes
  4. Add cream, remaining 1/4 cup of water and bring to a boil
  5. Add chestnuts
  6. reduce heat and simmer until heated through, about 2 minutes
