Chocolate Mouse Cake
Ingredients
  • 2 cups ground nabisco wafers
  • 1/2 cup melted butter
  • 15 – 20 whole chocolate wafers
  • 1 cup sugar
  • 6 large eggs separated
  • 2 bags chocolate chips
  • 6 TAB instant coffee (liquid)
  • 2 teas. vanilla
  • 4 TAB sugar
  • 3 cups whipping cream
  • 1 cup whipping cream for garnish
  • 4 TAB powdered sugar
Instructions
  1. Mix butter and ground wafers.
  2. Press against bottom and sides of 10″ spring form pan.
  3. Melt chocolate in double boiler with 6 TAB of instant coffee and 4 TAB of sugar.
  4. Mix well.
  5. Beat yolks adding sugar gradually until lemon colored.
  6. Stir in chocolate mixture.
  7. Pour 1/2 of batter into spring-form.
  8. Lay whole chocolate wafers down covering first half of cake layer.
  9. Pour in rest of chocolate mixture.
  10. Smooth top cover with saran and refrigerate.
  11. Before serving, beat cream with 4 TAB confectioners sugar till stiff.
  12. Spread over top of cake.
