Chicken Thompson

Ingredients
  • 8 boneless skinless chicken breast halves
  • 1 cup crème fraîche
  • 1/2 cup dry Sherry
  • 1/4 cup Dijon mustard
  • 1 TAB dried tarragon,
  • 1/2 cup flour
  • freshly ground black pepper to taste
Instructions
  1. For faster baking cut chicken breast into smaller pieces
  2. Combine all ingredients but the chicken in the baking pan, 9 X 13 or slightly larger.
  3. Add chicken and turn to coat.
  4. Bake at 375 degrees for 30 to 40 minutes or until chicken is cooked through.
Notes

Contrary to the name this recipe did not come from the Thompsons but is a modified recipe from Epicurus.

This chicken is great with potato pancakes.
