Chicken Thompson
Ingredients
- 8 boneless skinless chicken breast halves
- 1 cup crème fraîche
- 1/2 cup dry Sherry
- 1/4 cup Dijon mustard
- 1 TAB dried tarragon,
- 1/2 cup flour
- freshly ground black pepper to taste
Instructions
- For faster baking cut chicken breast into smaller pieces
- Combine all ingredients but the chicken in the baking pan, 9 X 13 or slightly larger.
- Add chicken and turn to coat.
- Bake at 375 degrees for 30 to 40 minutes or until chicken is cooked through.
Notes
Contrary to the name this recipe did not come from the Thompsons but is a modified recipe from Epicurus.
This chicken is great with potato pancakes.
