| Chicken Soup |
Ingredients
- 1 cut up chicken or the backs, wings necks and drumsticks from 2 chickens (save the good parts to cook as a main dish.)
- large can of chicken broth
- equal amount of water
- 1 onion
- 4 to 6 carrots
- 1 or 2 potatoes
- zucchini
- pepper
- bay leaves
Instructions
- Put chicken in a soup pot with chicken broth and water.
- Bring to a boil and skim the top of brown stuff.
- Turn heat down and add chopped up onion and sliced carrots.
- After a while add a potatoes sliced.
- Simmer for at least another hour.
- Toward the end add any quick cooking vegetables desired, such as zucchini.
- Also season with pepper, bay leaves, etc.
Notes
Serve with noodles or matzo balls that have been boiled separately and are added to the bowls as you serve the soup.
