Chicken Soup
Ingredients
  • 1 cut up chicken or the backs, wings necks and drumsticks from 2 chickens (save the good parts to cook as a main dish.)
  • large can of chicken broth
  • equal amount of water
  • 1 onion
  • 4 to 6 carrots
  • 1 or 2 potatoes
  • zucchini
  • pepper
  • bay leaves
Instructions
  1. Put chicken in a soup pot with chicken broth and water.
  2. Bring to a boil and skim the top of brown stuff.
  3. Turn heat down and add chopped up onion and sliced carrots.
  4. After a while add a potatoes sliced.
  5. Simmer for at least another hour.
  6. Toward the end add any quick cooking vegetables desired, such as zucchini.
  7. Also season with pepper, bay leaves, etc.
Notes

Serve with noodles or matzo balls that have been boiled separately and are added to the bowls as you serve the soup.
