| Chicken Bombay |
Ingredients
- 3 or 4 chicken breasts split
- 1/2 cup brown sugar
- 1 teas ground ginger or slice of fresh ginger
- 1 cup sherry or white wine
- 1 small can pineapple chunks with juice
- 1 TAB soy sauce
- sesame seeds
Instructions
- Coat chicken with flour.
- Fry in oil til golden brown but not cooked through.
- Meanwhile simmer in saucepan wine, pineapple, soy sauce, ginger and brown sugar.
- Put chicken in casserole, pour sauce over chicken.
- Sprinkle with sesame seeds which have been guickly browned under the broiler.
- Cover and bake at 350 for 1 hour or longer if prepared ahead and chicken is starting from cold again.
Notes
You can do this with boneless breasts if you want, just shorten the cooking time.
