Chicken Bombay
Ingredients
  • 3 or 4 chicken breasts split
  • 1/2 cup brown sugar
  • 1 teas ground ginger or slice of fresh ginger
  • 1 cup sherry or white wine
  • 1 small can pineapple chunks with juice
  • 1 TAB soy sauce
  • sesame seeds
Instructions
  1. Coat chicken with flour.
  2. Fry in oil til golden brown but not cooked through.
  3. Meanwhile simmer in saucepan wine, pineapple, soy sauce, ginger and brown sugar.
  4. Put chicken in casserole, pour sauce over chicken.
  5. Sprinkle with sesame seeds which have been guickly browned under the broiler.
  6. Cover and bake at 350 for 1 hour or longer if prepared ahead and chicken is starting from cold again.
Notes

You can do this with boneless breasts if you want, just shorten the cooking time.
