| Carrot Cashew Pate |

Ingredients
- 2 TAB margarine
- 1 small onion chopped
- 1 clove garlic
- 2 cups thinly sliced carrots
- 1 teas curry powder
- 2/3 cup water
- 1 cup roasted cashews
- 1 1/2 TAB salad oil
Instructions
- In large skillet melt margarine and sauté onions with garlic till soft.
- Add carrots, curry & water.
- Cover and cook until carrots are tender. Set aside.
- In food processor whirl 3/4 cup of cashews until finely ground.
- Add oil until smooth.
- Add carrot mixture.
- Remove from Cuisinart and stir in 1/4 cup roughly chopped cashews.
- Serve at room temperature with crackers or raw veggies.
