Broccoli Soup

Ingredients
  • 1 onion cut in chunks
  • 2 carrots cut in slices
  • 1 bunch broccoli
  • Some cauliflower flowerettes too if desired
  • 2 TAB margarine
  • 2 TAB flour
  • small can chicken stock
  • pepper
  • fine herbs or basil
  • Worcestershire sauce
  • Parmesan cheese
Instructions
  1. Steam onion, carrots, and broccoli.
  2. Cool vegetables
  3. Meanwhile in soup pan heat 2 TAB margarine with 2 TAB flour to make a roux.
  4. Add a small can chicken stock.
  5. Puree vegetables in cusinart and add to soup.
  6. Season with pepper and fines herbs or basil and Worcestershire sauce When soup has heated thru add 1 to 2 cups half and half, and Parmesan cheese to taste.
  7. Heat thru again and serve.
