| Mrs. Silva’s Paella |
Ingredients
- 3 slices bacon cut up
- 2 cups chopped onion
- 3 cloves garlic
- 1 lb chorizo
- 4 cups chicken stock
- 1/2 teas saffron powder
- 1 cut up chicken
- 2 cups raw rice
- pimento or red pepper for garnish
- 1 TAB paprika
- 1 cup frozen peas
- 1 green pepper cut up
Instructions
- Sauté ingredients through sausage.
- Cook until sausage is browned.
- Transfer to large casserole.
- Add some olive oil to pan if necessary and brown chicken pieces. Add chicken to casserole.
- Rinse rice in sieve and then add to casserole with rest of ingredients
- EXCEPT peas.
- Bake covered about 40 minutes or till rice is just cooked through, then add peas stir again and serve within 5 minutes.
