| Anglesea Enchiladas |
Ingredients
- 1 pkg chicken (3-4 breasts)
- 1 medium onion
- 6-8 mushrooms
- 1-2 red peppers
- 1-2 plum tomatoes (opt.)
- any other desired vegetables
- 1 can enchilada sauce
- 1 pkg cream cheese
- cheddar cheese
- flour tortillas
- red pepper
- black pepper
- cumin
- fine herbs
- garlic
Instructions
- Chicken may be baked with spices and then cut into bite size chunks or chicken may be sautéed with vegetables.
- Sauté vegetables with spices.
- When they are done (if necessary add in cooked chicken) add cream cheese, stir over heat until cream cheese has melted and coats the meat and vegetables.
- Line bottom of 9 X 13 inch pan with enchilada sauce.
- One by one lay tortillas in pan, fill, and roll over.
- When finished cover with remaining enchilada sauce and top with grated cheddar cheese.
- Bake at 350 or 375 degrees for about 1/2 hour or until heated through.
