Anglesea Enchiladas
Ingredients
  • 1 pkg chicken (3-4 breasts)
  • 1 medium onion
  • 6-8 mushrooms
  • 1-2 red peppers
  • 1-2 plum tomatoes (opt.)
  • any other desired vegetables
  • 1 can enchilada sauce
  • 1 pkg cream cheese
  • cheddar cheese
  • flour tortillas
  • red pepper
  • black pepper
  • cumin
  • fine herbs
  • garlic
Instructions
  1. Chicken may be baked with spices and then cut into bite size chunks or chicken may be sautéed with vegetables.
  2. Sauté vegetables with spices.
  3. When they are done (if necessary add in cooked chicken) add cream cheese, stir over heat until cream cheese has melted and coats the meat and vegetables.
  4. Line bottom of 9 X 13 inch pan with enchilada sauce.
  5. One by one lay tortillas in pan, fill, and roll over.
  6. When finished cover with remaining enchilada sauce and top with grated cheddar cheese.
  7. Bake at 350 or 375 degrees for about 1/2 hour or until heated through.
