| Black Beans |
Ingredients
- 2 to 3 cups black beans
- a package of cut up pepperoni
- several large cans of tomatoes
- onions
- garlic
- pepper
- green peppers
Instructions
- Rinse black beans and boil till soft, takes at least an hour.
- After about half an hour add pepperoni.
- When beans are soft add tomatoes, cut up, also onions and green peppers, cut up and garlic and pepper.
- Cook over medium heat till vegetables are soft and flavors blend.
- Should be slightly soupy.
- Serve over brown rice.
