Banana Bran Muffins
Ingredients
- 1 egg and 1 egg white lightly beaten
- 1/2 cup canola or veg oil
- 2 cups shredded bran cereal
- 1 1/2 cup buttermilk or soy milk
- 1 to 1 1/4 cups mashed bananas (3 medium bananas)
- 3 cups whole wheat flour (and do have white flour if you want)
- 1/2 cup packed dark brown sugar
- 4 teas. baking powder
- 1 teas. baking soda
- 1/2 teas. salt
- 1 teas. cinnamon
- 1/2 teas. ground cloves (opt.)
Instructions
- In a large bowl combine bananas and bran.
- Let site for 5 minutes
- Add egg and oil.
- Combine dry ingredients together in a separate bowl
- Then add flour mixture to banana mixture.
- Stir until just moist.
- Divide among 24 greased muffin cups
- Bake at 375 for 15 to 25 minutes
