Banana Bran Muffins

Ingredients
  • 1 egg and 1 egg white lightly beaten
  • 1/2 cup canola or veg oil
  • 2 cups shredded bran cereal
  • 1 1/2 cup buttermilk or soy milk
  • 1 to 1 1/4 cups mashed bananas (3 medium bananas)
  • 3 cups whole wheat flour (and do have white flour if you want)
  • 1/2 cup packed dark brown sugar
  • 4 teas. baking powder
  • 1 teas. baking soda
  • 1/2 teas. salt
  • 1 teas. cinnamon
  • 1/2 teas. ground cloves (opt.)
Instructions
  1. In a large bowl combine bananas and bran.
  2. Let site for 5 minutes
  3. Add egg and oil.
  4. Combine dry ingredients together in a separate bowl
  5. Then add flour mixture to banana mixture.
  6. Stir until just moist.
  7. Divide among 24 greased muffin cups
  8. Bake at 375 for 15 to 25 minutes

This is a recipe that Meg found several years ago. It’s a park street favorite and is pretty healthy!
