Linzer Muffins

Ingredients
  • 1 cup Almond Meal
  • 3/4 cup sugar or splenda
  • 1/2 teas grated lemon est
  • 1 1/2 cups whole wheat flour
  • 2 teas. baking powder
  • 1/2 teas. cinnamon
  • 1 cup whole or soy milk
  • 1 egg
  • 1/2 teas. almond extract (opt.)
  • Raspberry jam
Instructions
  1. Whisk together dry ingredients in a bowl.
  2. Make a hole in the middle and add the wet ingredients (not the jam)
  3. Mix until just combined
  4. Fill greased or lined muffin tins about 1/2 way up
  5. Add a teaspoon of jam to each muffin
  6. Fill with remaining batter.
  7. Bake at 400 degrees for 20 minutes
  8. makes about 12 to 15 muffins
Notes

For picky children you can leave out the jam. These are also great with fresh raspberries or blueberries, again leave out the jam.
