Linzer Muffins
Ingredients
- 1 cup Almond Meal
- 3/4 cup sugar or splenda
- 1/2 teas grated lemon est
- 1 1/2 cups whole wheat flour
- 2 teas. baking powder
- 1/2 teas. cinnamon
- 1 cup whole or soy milk
- 1 egg
- 1/2 teas. almond extract (opt.)
- Raspberry jam
Instructions
- Whisk together dry ingredients in a bowl.
- Make a hole in the middle and add the wet ingredients (not the jam)
- Mix until just combined
- Fill greased or lined muffin tins about 1/2 way up
- Add a teaspoon of jam to each muffin
- Fill with remaining batter.
- Bake at 400 degrees for 20 minutes
- makes about 12 to 15 muffins
Notes
For picky children you can leave out the jam. These are also great with fresh raspberries or blueberries, again leave out the jam.
