Sherry’s Bran Muffins

Ingredients
  • 2 cups bran cereal (shredded 100% bran like Post)
  • 1 1/4 cups skim milk
  • 1/3 cup brown sugar or splenda
  • 1 egg
  • 1 cup apple sauce
  • 1 cup flour
  • 1 1/2 teas. baking powder
  • 1/2 teas. baking soda
  • 1 teas. cinnamon
Instructions
  1. Combine cereal, sugar and milk.
  2. Soak for 5 minutes
  3. Stir in egg and applesauce
  4. Add dry ingredients and mix to just combine
  5. Spoon batter into papered or greased muffin tins
  6. Fill 2/3 full
  7. Bake at 400 degrees for 18 to 20 minutes
