Sherry’s Bran Muffins
Ingredients
- 2 cups bran cereal (shredded 100% bran like Post)
- 1 1/4 cups skim milk
- 1/3 cup brown sugar or splenda
- 1 egg
- 1 cup apple sauce
- 1 cup flour
- 1 1/2 teas. baking powder
- 1/2 teas. baking soda
- 1 teas. cinnamon
Instructions
- Combine cereal, sugar and milk.
- Soak for 5 minutes
- Stir in egg and applesauce
- Add dry ingredients and mix to just combine
- Spoon batter into papered or greased muffin tins
- Fill 2/3 full
- Bake at 400 degrees for 18 to 20 minutes
