Pesto
Ingredients
  • 2 cups of basil
  • 1 fat garlic clove
  • 4 ounces of cream cheese
  • 1/2 cup of chopped nuts
  • 1/2 cup olive oil
  • 1/2 cup Parmesan cheese
Instructions
  1. Strip a basil plant of leaves and wash thoroughly. Dry in a lettuce spinner.
  2. In a cuisinart, chop some walnuts, remove and save.
  3. Puree ingredients in cuisinart or blender.
  4. Taste and adjust to the taste you want.
  5. Refrigerate or freeze in small plastic containers for use in soups, on pasta, or to add zip to your life!!!
Notes

This recipe is include for a basic idea of how we construct our Pesto. I don’t truly know if these are the correct proportions as we never use a recipe. Mix it up until it looks and tastes right to you!

Serve over noodles with some sour cream added or eat on crackers if you are a purist!
