Mrs. Silva’s Paella
Ingredients
  • 3 slices bacon cut up
  • 2 cups chopped onion
  • 3 cloves garlic
  • 1 lb chorizo
  • 4 cups chicken stock
  • 1/2 teas saffron powder
  • 1 cut up chicken
  • 2 cups raw rice
  • pimento or red pepper for garnish
  • 1 TAB paprika
  • 1 cup frozen peas
  • 1 green pepper cut up
Instructions
  1. Sauté ingredients through sausage.
  2. Cook until sausage is browned.
  3. Transfer to large casserole.
  4. Add some olive oil to pan if necessary and brown chicken pieces. Add chicken to casserole.
  5. Rinse rice in sieve and then add to casserole with rest of ingredients
  6. EXCEPT peas.
  7. Bake covered about 40 minutes or till rice is just cooked through, then add peas stir again and serve within 5 minutes.
