Barritt Wedding Carrot Cake

Ingredients
  • 4 eggs
  • 1 1/2 cups salad oil
  • 1 8 oz pkg cream cheese
  • 1 teas vanilla
  • 2 cups flour
  • 2 cups sugar
  • 2 teas baking powder
  • 1 teas baking soda
  • 2 teas cinnamon
  • 1 cup chopped walnuts
  • 3 cups grated carrots
Instructions
  1. Mix together oil, sugar and vanilla then add eggs and cream cheese, ripping it up into small pieces. Add the dry ingredients and mix well. Once combined add the nuts and finally the carrots.
  2. Pour batter into greased and floured 9 x 13 pan.
  3. Bake in 350 oven for about 40 minutes or till done.
  4. Cool and frost with cream cheese frosting.
